There is nothing more comforting than the “squidge” of a brownie.
It’s that moment of slicing through the slab that lay all molten and warm on your bench, and all of a sudden that wondrous centre just relaxes and you kind of just sigh with it.
The world is at one again.
This week has been pretty hectic for me, in a emotional way as well as work wise. Sometimes we all need a mid-week pick me up. Something to smile about on a Wednesday.
They say that the benefits of dark chocolate are endless, and I want endless happiness right now, so I have made these bites of goodness with 85% dark choccy.
A bite won’t kill you.
It will only make you stronger-if you trust the experts!
85% dark chocolate brownies
20 oz good quality dark chocolate-I used 12 oz 85% and 8 oz 75%
7 oz butter
1lb dark demerara sugar
5 eggs whisked
4 oz plain flour
2 oz good quality cocoa
Set the oven to 200 degrees and line a rectangular baking tray, suitable to cook this mix in.
Melt the chocolate and butter together.
Then watch the magic happen…
Oh my goodness, it’s just a beautiful sight! It turns in to this shining bowl of liquid darkness, ready and raring to soothe your soul.
In another bowl, whisk the eggs and the sugar until you have a smooth consistency.
Sieve the dry ingredients in to the sugar bowl and gently fold the chocolate in until all becomes one. Bang the bowl on the worktop a few times, to get rid of any air bubbles.
Pour in to the baking tray and cook for around 30 minutes.
When you take the the brownie out, you should nudge the tray carefully and notice if there is too much of a jiggle in the mix to indicate if it’s cooked inside.
If it seems to move in a solid manner, as one piece of brownie, then it’s done!
Wait patiently until it’s half cooled-come on, if I can do it then you lot certainly can-so you can enjoy a slice whilst it’s still slightly warm.
When your feeling as though life is a little dark, just eat dark chocolate OK?!
